It’s official.

I love Wednesdays.

And it’s all because of Jenn over at Peas & Crayons and her fabulous What I Ate Wednesday parties.

 

Today I present to you: What we ate from the garden Wednesday.

We have been harvesting veggies from our garden all summer (kale, herbs, spinach, etc.) and are excited because our tomatoes are finally starting to ripen. We have a lot of tomatoes that we are patiently waiting to turn into salsa.

The leeks are also ready and we have been using them in place of onions and are loving the mild onion flavour. As you can see, some of our beets are HUGE!

And, yes, we have three-legged carrots. This, my friends, is what happens when you simply scatter seeds over the soil at the being of planting season and then fail to thin out the plants as they grow. But have no fear, they still taste delicious.

Lincoln likes to pick his own carrot as a snack and cleans it off in his kiddy pool. Sometimes he keeps the leaves intact and other times he gets us to snap them off. Either way, we love that he loves to munch on raw carrots.

I also picked-up some veggies at a small veggie stand at the coffee shop on Sunday. The lady grows heirloom tomatoes and one sample of a lemon-drop tomato was all I needed to buy some myself.

I also bought some grilling onions and patty-pan squash. We grilled both on the BBQ and the onions were the sweetest onions we have ever tasted.

Patty-pan squash are one of our favourites. The lady at the veggie stand said that not too many people know what they are and that she often leaves farmer’s markets without selling any – I told her to call us the next time that happens and we’ll happily take them off her hands 🙂

I turned the heirloom cherry tomatoes into a simple Tomato-Basil salad using basil from our garden, avocado oil and white balsamic vinegar. So simple and so delicious.

I love the different colours and we have already decided that we will be buying our tomato plants from her next year.

And look! Even the grasshoppers like the basil.
